Hi everyone. I'm new to the Shroomery and also new to the wonderful world of mycology. I have been doing some reading here over the past few days and have learned a lot from all of you, and I thank you for sharing your knowledge and making it available for the less informed such as I.
So here is how my interest in the topic began. I went to lunch with my girlfriend to her favorite Japanese joint, which has all types of types of truly authentic Japanese dishes. I ordered an udon noodle dish and upon arrival I found it artfully crowned with these neat little mushrooms. i had never seen this type of mushroom before, so, being a mushroom lover, I was very excited. To say the least, these mushrooms were divine. So, naturally, i asked the chef what kind of mushroom this was. 'Buna Shimeji,' he said happily, taking notice of the delight radiating from my face.
Now, being one who enjoys cooking--and one who enjoys mushrooms--I have always been able to find any type of mushroom I've ever needed for a dish at my local organic foods store. Not this one. So I've decided to grow them and have an endless supply.
I'm thinking that I may be able to buy a few of them fresh from the restaurant, but if not, any thought on how I may be able to get a hold of them? Also, after that's accomplished, what is the best way to go about this grow?
Like I said before, I am new to mycology, and I'd really appreciate if someone could help.

There's a bit you'll have to learn before you'll be growing an endless supply. If you buy a culture syringe you can look up the steps to make your own grain spawn. Then you will end up growing on some kind of wood substrate. You can do a search on 'enriched sawdust'.

Thanks for the tips guys. I do have a few more questions though.
So if I were to buy the liquid culture syringe from Ralphsters, what would be the best way to go about growing them? What kind of substrate would you guys use to colonize these? And, then I understand that I can transfer to agar or directly to grain for spawning, what would be the best route? Also, when you have a spawn on agar, what do you do then?
On the other hand, if I got a hold of some of these mushrooms locally, I understand that I can cut a little piece out of the inside of the stem and put it in a water/karo mix and it would colonize in that. I've just been trying to figure out, what then do I do with that culture?
If anyone can point me to info that's relevant to this type of grow, I'd really appreciate it. I don't really know where to start looking.

When you have a LC syringe, the best way is to inoculate grain jars, and spawn them to a wood based substrate when they are fully colonized. I wouldn't recommend dealing with agar until you have sufficient knowledge, and can work in sterile conditions (glowebox or flowhood).
If you get into this hobby, you'll see that that 'endless supply' is not that easy to achieve, you need to invest quite a bit into equipment, and wait at least 3 months to taste the fruits of your labor. And than you'll only get a few pounds from your entire grow. I think most of us here do it mainly because it's a really great hobby.
IME, shimeji is a slow grower, and from what I've seen around here, it's a nuisance to fruit. My attempts in growing it always contaminate somewhere along the way. But don't let any of this discourage you!
If you have a garden or something, and can get a fresh hardwood log, the closest thing to an endless supply would be to inoculate that with dowels, that way the log will fruit for years to come!

This. Growing mushrooms is more a labor of love than an easy way to get lots of mushrooms. If you find it interesting in general then you will have lots of fun but if your main goal is getting lots of mushrooms easily then you may get discouraged by initial failures. There will be quite a bit of failure before you get the hang of things. At least there was for me. But I have a Hypsizygus tessellatus (shimeji) block going right now that seems happy if kind of slow. We'll see once I actually try to fruit it.

Yes failure, unequaled effort and time go into growing your own mushrooms.
I spend hours of my time coaxing spores to life, waiting, cleaning them, transferring, waiting, soaking grain, waiting, cooking grain, waiting, inoculating, waiting, shaking, waiting, soaking, waiting, fruiting, waiting...crap! it's turning GREEN!!!
Start again...
But when it does work out I'm the only person in my town who is eating fresh mushrooms.

Yess. Buna Shimeji...
They can be grown at home. This picture is just 24 hours out of the camera box.
I agree with everything said above.
Although I have never had much luck inoculating syringe to grain, I am sure it can be done.
I used a pressure cooker & glove box & agar to coax my sporeworks culture to life.
Then to sterilized rye. Then to sterilized supplemented hardwood fuel pellets in a filter bag. Then ignore them for a while until you see little grey primordia. cut the top off the bag and fruit in a shotgun fruiting chamber. Yum!

I bought some Buna-Shimeji from wholefoods about two days ago. I cut off some mycelium from the base of the patch and some from under the gills (hard due to a small cap size). Im waiting for these cutting to start growing on BRF. Do you think I went about it correctly?
P.S. This thread inspired me to buy some and try to clone it so I don't really consider this a hijack

Hey JSU, did whole foods have the white variety of Buna Shimegi? It would be cool if I could pick up both strains there to grow.

Yeah they did. It may also be listed as 'White Crab' mushroom. It looks like the cultures I took a few days ago are going to take. One of them has green mold from using the exposed bottom of the mushrooms while the other -which was from the inside of a cap- seems to be clean.
